Lucy's Gluten Free Bread Crumbs Recipe

Ingredients:

2 slices of @lucysglutenfree bread

(Optional ingredients for coating your protein of choice)
Fish, chicken, beef or tofu to coat
1 egg, beaten

Method:

Toast the bread slices until golden.

Blitz in a blender until you reach your desired crumb texture.

Spread evenly on a baking tray and bake at 150°C for a few minutes until dry and crispy.

Optional method for coating your protein of choice:

Dip your protein into the beaten egg, then coat in the bread crumbs.

Heat a pan with a little oil and fry until golden, crispy on both sides, and cooked through.
