Lucy's Italian Picnic Sandwich

We set off into the bush on a sunny winter’s day, with a light picnic of Italian-style sandwiches, homemade scroggin, and a thermos of hot coffee. No destination in mind, just a muddy, beaten track and some good tucka in our backpacks. This Picnic Sandwich is easy enough to throw together without breaking the bank - a little bit fancy, but hearty enough for the lunchbox.

Ingredients:

  • Lucy’s The White One
  • Fresh leafy greens
  • Ham and prosciutto
  • Homemade pickled onions
  • Bocconcini
  • Cheddar cheese
  • Olives, marinated peppers, and artichokes (we love the Ceres Antipasto Italian Mix)
  • Fresh tomato slices
  • Fruit chutney

A good sandwich comes down to the right order. Here’s our tried and tested method: start with chutney or your chosen spread, followed by firm cheese like cheddar, then layer on the meats - ham, prosciutto, or both. Add fresh tomato slices next, then soft cheese like bocconcini, followed by your vegetables - olives, marinated peppers, and artichokes. Finish with fresh salad greens for a bit of crunch.

Wrap it up tight in baking paper and let it sit while you find your picnic spot, it’s even better once the flavours have had time to mingle.

Feel free to swap out the meats for your favourites, salami, roast chicken, or go fully vegetarian with extra mozzarella, grilled veg, or a good dollop of hummus. Enjoy!
