Soft, fluffy seeded gluten-free brown bread using Lucy's Brown Bread Mix, the perfect side to your winter soups and stews, the kind you’ll keep on repeat.
Ingredients
- Lucy's The Brown One Bread Mix
- 1½ cup (350g) warm water
- 3 tbsp (45g) oil
- 2 tsp (10g) sugar
- 2 tsp (10g) dried yeast
Extras
- 60g sunflower seeds
- 30g sesame seeds
- 1 egg, whisk for egg wash
To serve
- 4 tbsp butter, at room temperature
- 4 tsp white miso paste
Instructions
- Add warm water and yeast to a large bowl, whisk to dissolve. Add oil, sugar and the full Lucy’s Gluten Free The Brown One Bread Mix.
- Mix by hand or in a stand mixer for 5 minutes until smooth. The more you mix, the fluffier the loaf. Fold through the sunflower and sesame seeds.
- Scrape into a lined or oiled loaf tin (approx. 10 x 22cm), smooth the top with a lightly oiled hand. Leave somewhere warm for 30–45 minutes until risen.
- Brush with egg wash, sprinkle extra sesame seeds.
- Bake at 200°C (regular bake) for 1 hour. Cool completely before slicing.
- Mix butter with miso, spread generously over warm slices.
