Lucy's Gluten Free Sunflower & Sesame Bread with Miso Butter

Soft, fluffy seeded gluten-free brown bread using Lucy's Brown Bread Mix, the perfect side to your winter soups and stews, the kind you’ll keep on repeat.

Ingredients

Extras

  • 60g sunflower seeds
  • 30g sesame seeds
  • 1 egg, whisk for egg wash

To serve

  • 4 tbsp butter, at room temperature
  • 4 tsp white miso paste

Instructions

  1. Add warm water and yeast to a large bowl, whisk to dissolve. Add oil, sugar and the full Lucy’s Gluten Free The Brown One Bread Mix.
  2. Mix by hand or in a stand mixer for 5 minutes until smooth. The more you mix, the fluffier the loaf. Fold through the sunflower and sesame seeds.
  3. Scrape into a lined or oiled loaf tin (approx. 10 x 22cm), smooth the top with a lightly oiled hand. Leave somewhere warm for 30–45 minutes until risen.
  4. Brush with egg wash, sprinkle extra sesame seeds.
  5. Bake at 200°C (regular bake) for 1 hour. Cool completely before slicing.
  6. Mix butter with miso, spread generously over warm slices.
