Lucy's Gluten Free Cinnamon Scrolls Recipe

Made with Lucy’s The White One Bread Mix, these soft, gluten-free cinnamon-spiced scrolls are best enjoyed warm from the oven—a gut-friendly, wholesome treat the whole family will love.

Ingredients:

1 bag of Lucy's The White One Bread Mix
1/4 cup sugar
100g butter
1 cup milk
2 tsp baking powder
3 tsp dried yeast

Method: Mix together and knead for 3–5 minutes. The dough will be slightly sticky. Let it rest in the bowl while you prepare the cinnamon filling.

Ingredients:

1 tsp cinnamon
1/4 cup brown sugar
50g softened butter

Method: Roll out the dough to 35cm x 25cm and spread softened butter on it, then sprinkle with the cinnamon-brown sugar mix.

Roll it up and cut into 8 pieces, each 2 inches thick. Place on a baking tray and leave in a warm place for 45–60 minutes.

Bake at 180°C for 20–25 minutes, until golden brown.

Icing Ingredients:

1/2 cup icing sugar
1 tbsp cream cheese
1 tbsp milk                

Method: Whisk together and drizzle over the cinnamon scrolls once they’ve cooled.
