Lucy's Gluten Free Scone Recipe

You asked and we listened. Lucy's highly requested scone recipe is finally here. Made with The White One Bread Mix and a handful of simple, quality ingredients you may already have on hand, these flavoursome scones deliver that signature Lucy's taste you know and love. Quick and easy to make, they are bound to become a family favourite.
Ingredients:
410g Lucy’s The White One Bread Mix
15g (3tsp) Baking powder
150g Butter, cubed and chilled
250g Milk of your choice + extra dash
Additions:
Cheese & Onion
100g Grated cheddar
100g Diced onion
Date & Ginger
100g chopped dates
3cm piece of ginger, finely grated
20g brown sugar
Method:
Preheat oven to 200 degrees and line a baking tray with baking parchment.
Place Flour and baking powder in mixing bowl, along with the chilled butter.
Rub butter into the flour mix until it resembles bread crumbs, 3-4 minutes by hand. If you feel the butter becoming too soft, chill mix quickly for 10 mins.
Add in milk and mix to combine. If you are adding additions, add in cheese/onion or the dates now. In a separate bowl rub ginger into the sugar, and set aside.
Divide mix into 100g pieces, and shape into firm rough squares by hand, making sure they are standing tall.
Place onto baking tray and brush a light coat of milk on the top of each scone and additionally dollop the ginger sugar mix on top of each or a sprinkle of cheese.
Put scones straight into oven, (keeping the butter cold throughout the whole process, leads to a more delicate, layered scone). Bake for 25mins, until golden.
