Lucy's Gluten Free Pizza Recipe

Lucy’s Bread Mixes aren’t just for bread—they make epic pizza bases too! Create a soft, fluffy crust with a stand mixer or a classic thin base by hand. Grab a Lucy's Bread Mix and make pizza night an event the whole household looks forward to.

Soft Fluffy Pizza Dough (Stand Mixer) 

  1. In a stand mixer (use a standard mixer with a paddle attachment), mix warm water and yeast until dissolved.
  2. Add oil and the full contents of the Lucy's Bread Mix packet and mix for 4 minutes.
  3. Oil some parchment paper and your hands.
  4. Divide the dough into two portions. Use your oiled hands to press the dough into two circles.
  5. Top with your favourite toppings and leave to rest for 30 minutes.
  6. Preheat the oven to 220°C and fan bake for 20 minutes.

Thin Base Pizza Dough (Hand Mix) 

  1. In a bowl, mix warm water (adjust recipe to 1 and 1/4 cups of warm water) and yeast until dissolved.
  2. Add oil and the full contents of the  Lucy's Bread Mix packet. Mix by hand or with a wooden spoon for 4 minutes until the dough comes together, then knead until smooth.
  3. Knead the dough with your hands until it forms a ball.
  4. Divide the dough into two portions and roll into two thin rounds.
  5. Top with your favourite toppings and leave to rest for 30 minutes.
  6. Preheat the oven to 220°C and fan bake for 20 minutes.
